Title: Thai Tapioca Soup

125gMinced pork
75gTapioca
1 3/4lWater mixed with 2 chicken stock cu; bes
1 Stalk celery; chopped very fine
1tsFish sauce; (or salt to taste)
1tsBlack pepper
1/2tsSugar
125gFlaked crab meat
4 Chopped spring onions
1dsChilli sauce to taste

Put the pork into a bowl and add enough of the water to make a sloppy mix. This stops the meat from lumping up when added to the soup.

Put everything except for the crab meat, spring onions and chilli sauce into a pan and bring to the boil. Simmer gently for about 10 minutes or until the tapioca and pork are cooked.

Stir the crab in gently. Dish up then scatter the spring onions over and add enough chilli sauce to your taste.
